In order to be vinified separately, a batch should have a harvest volume in hectolitres approximately 20% less than the total volume of the chosen vat. Otherwise, overfilling can lead to foam overflow during fermentation as a result of the yeasts' CO2 production.
Vinifying a single plot enables its identity to be expressed and for it to be vinified in the best way possible according to its profile. At Clos de Tart, the new winery is equipped with vats adapted to the volumes of each plot or block of plots selected according to their profile based on soil type, slope and plant material.
