The more separation stages there are, the smaller and more difficult the volumes are to manage. When possible, combining several plots/vats of equivalent quality makes the task easier. Storage vats are the most flexible because their volume is adjustable.
In order to start the ageing process quickly, putting the wine in barrels directly after pressing is also a good option. Different size barrels can be used, such as half-barrels, traditional barrels, or 300-litre barrels. These are useful tools to separate batches with greater flexibility. Moreover, larger volumes reduce exposure to oxygen and the effect of wood on the wine. Large volumes can be advantageous for press wines.
