Several rounds of picking may be necessary on the same plot for several reasons:
- When the plot has been selectively replanted, i.e. when old vines have been replaced by young vines, it may be necessary to harvest certain vines separately. The young vines in production can express earlier, less acidic, more alcoholic characteristics, requiring them to be vinified separately. The time that these later vines are separated from the rest of the plot can vary and depends on the new vines' quality. At Château Latour, for example, supplementary vines are generally combined with the rest of the plot 10 years after planting. It is possible to blend young vines from different plots in the same wine.
