With very small volumes, there is little benefit to separating the press wines. However, a temporary separation is always advisable to let the coarse lees settle. Clarification for 48 hours at room temperature enables more objective tasting of press wines, in order to improve the wine's final quality. If their quality level is insufficient, they can be separated. In the case of early reincorporation, small stainless steel vats with floating caps are ideal as temporary holding tanks. Early reincorporation is very often used at Clos de Tart and Domaine d'Eugénie.
